Lima earns its food capital reputation — Central, Maido, and Astrid y Gastón if you can get them; cebicherías in Miraflores if you can't. Fly to Cusco to acclimate at 11,000 feet — coca tea helps, slower walking helps more. Drop to the Sacred Valley (lower altitude, easier on the body) for Pisac market, Ollantaytambo's Inca ruins, and a Tambo del Inka or Inkaterra base. The train to Aguas Calientes, then dawn at Machu Picchu — go early, before the day-trip crowds turn it into a queue.
